Irish Soda Bread

Ingredients

3 1/2 cups flour
1/2 granulated sugar
1 tsp baking soda

2 Tblsp caraway seeds
1 cup raisins

 

4 Tblsp melted butter
1 egg beaten
3/4 cup milk
1 Tblsp white vinegar

 
Preparation

In a large bowl, add the vinegar to the milk and let stand for one minute. Add the beaten egg and mix well. Add the raisins and caraway seeds. Add all the dry ingredients and mix well. Pour in the melted butter and mix again.

Place the dough into 3 small loaf pans (4" x 5" x 2") that have been buttered, OR form 3 small round loaves on a buttered cookie sheet. The dough will be "wet," so the small tins are recommended.

Bake at 350 degrees for 35 minutes. Use a cake tester to make sure that the inside of the bread is fully baked.

The finish

Brush the top of the loaf with butter as it comes from the oven.

Side note

This makes a wonderful, fast breakfast bread that does not have to be reserved for Irish holidays.
