Banana Mousse

Ingredients

3 ripe bananas
4 eggs
2 Tblsp gelatin

 

2 Tblsp orange juice
1 1/2 cups sugar
1 pint heavy cream

 
Preparation

Separate the eggs. Beat the yolks and half of the sugar until they are a pale yellow color.

Mash the bananas thoroughly and add them to this egg mixture. Dissolve the gelatin in the orange juice in a small saucepan. Heat the gelatin mixture until it simmers. Add the gelatin to the banana mixture slowly, stirring constantly so that the eggs do not get cooked and the gelatin is spread consistently throughout the banana mixture.

Beat the egg whites until they are fluffy. While continuing to beat the egg whites, add the remaining sugar to them so that this mixture is like a meringue. Fold the beaten egg whites gently into the banana mixture.

Whip the heavy cream and also fold it gently into the banana mixture. Pour into a large container or individual serving dishes. Chill until ready to use.

The finish

Just before serving, garnish with a large walnut piece or shaved chocolate.
